BOURGOGNE HAUTES-CÔTES DE BEAUNE

Colour: Garnet with hints of bright red.

Nose: The nose offers aromas of blackcurrant and intoxicating notes of rose, cherry, strawberry and licorice, with touches of blueberry, iris, violet, pepper and mint.

Palate: It is fresh and quite structured, marked by a minerality giving way to crisp and fruity tannins, followed by a saline finish, underlined by cherry and licorice aromas.

Its fruitiness and its volume in the mouth allow it to accompany generous and convivial dishes. It goes well with chicken paupiettes, coq au vin, oeufs en meurette, grilled meats such as lamb chops but also stuffed cabbage. It will surprise you with a veal fillet with curry. As for cheese, choose creamy soft cheeses such as Camembert, Brillat-Savarin, Soumaintrain, Morbier and fresh Reblochon.
Best served at a temperature of 14 to 16°C.
It takes about 3 years to fully enjoy, but it can age up to 8 years.
Pinot Noir
Regional appellation, it covers 22 communes of Côte-d'Or and 7 communes of Saône-et-Loire. The Hautes-Côtes de Beaune vineyard overlooks the Côte de Beaune, at an altitude of 280 to 450m. The Hautes-Côtes de Beaune covers approximately 833 hectares, of which 668 hectares are Pinot Noir.
The grapes are hand-picked, passed over a sorting table, crushed, destemmed, then vatted for about 15 days and aged in barrels for about 12 months.
