BOURGOGNE ALIGOTE

COLOUR: bright gold with green highlights.

NOSE: clean, combining citrus aromas (grapefruit, lemon) and white flowers (acacia).

PALATE: a lively attack, the aromas perceived on the nose are repeated on the palate. The finish is taut and aromatic.

This fresh wine goes perfectly with grilled fish, seafood, cold meats or goat's cheese. It can also be enjoyed on its own as an aperitif, either neat or with 1/5 of crème de Cassis de Bourgogne to make the famous Kir.
Serve between 12 and 14°C.

The area covered by the Bourgogne Aligoté appellation is the same as that covered by the Bourgogne appellation. It covers 384 communes in the departments of Yonne, Côte d'Or, Saône et Loire and Rhône. From the Chablis and Auxerrois regions in the north to the Mâconnais region in the south, via the Côte d'Or and Côte Chalonnaise, Bourgogne Aligoté comes from a wide variety of terroirs.

This appellation is produced from a single grape variety, Aligoté, known in Burgundy since the 17th century. This original grape variety is not widely grown anywhere else in the world, and covers 1500 hectares in Burgundy.

On receipt, the grapes are pressed directly. The juice is cooled and then kept at a low temperature (18°C) in temperature-controlled stainless steel vats for alcoholic fermentation, to ensure that the wine has a brilliant colour and fine aromas. The wine is then matured for 6 months on its lees, still in stainless steel vats, to retain the freshness of the Aligoté.
