BOURGOGNE HAUTES-CÔTES DE NUITS

Colour: White gold to pale gold.

Nose: Notes of hawthorn and honeysuckle mingle with apple, lemon and hazelnut. 

Palate: Fleshy, solidly built. Their balance between mellowness and acidity allows them to be at their best from their youth.

Its liveliness allows it to accompany steamed fish, shellfish and cheeses such as Roquefort, mature Comté or Chaource.
Best served at a temperature of 10 to 13 °C.
Can be enjoyed in its youth. It reaches its peak between 4 and 6 years.
Chardonnay
A regional appellation, the appellation covers 19 communes in the Côte d'Or. The vineyard of the Hautes-Côtes de Nuits is next to the Côte des Grands Crus de Bourgogne, at a higher altitude (300 to 400 m instead of 250 to 350 m), hence the term "Hautes-Côtes". The Hautes-Côtes de Nuits cover about 750 hectares, of which 150 hectares are for white wines.
The grapes are sorted before destemming and direct pressing. The grapes are sorted before de-stemming and direct pressing, followed by a 24-hour settling process, slow fermentation in barrels and aging for approximately 8 months.
